  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 2 tbsp lemon juice (freshly squeezed)
  • ½ cup Greek yogurt
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the shrimp under cold water. In a skillet over medium heat, add olive oil until shimmering. Sauté minced garlic for aroma before adding shrimp. Cook until pink and opaque (about 3-4 minutes).
  2. While the shrimp cooks, chop mixed greens into bite-sized pieces. Slice cucumbers thinly and halve cherry tomatoes.
  3. In a mixing bowl, combine Greek yogurt, lemon juice, and Dijon mustard. Stir until smooth; season with salt and pepper.
  4. In a large serving bowl, combine cooked shrimp with veggies. Drizzle dressing over the top and toss gently to coat without bruising the greens.
