- 2 medium zucchinis (about 400g), sliced
- 200g spaghetti or pasta of choice
- 4 tbsp unsalted butter (56g)
- 3 cloves garlic, minced
- 50g grated Parmesan cheese
- 1/4 cup vegetable broth (60ml)
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Prepare your ingredients by washing and slicing the zucchini.
- Cook the pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.
- Add zucchini slices to the skillet, season with salt and pepper, and sauté until tender and slightly caramelized, about 3–5 minutes.
- Pour in vegetable broth and about 1/2 cup of reserved pasta water, allowing it to simmer for a few minutes.
- Combine cooked pasta with the zucchini mixture in the skillet, adding grated Parmesan cheese. Toss until well mixed and creamy.
