  • 2 medium zucchinis (about 400g), sliced
  • 200g spaghetti or pasta of choice
  • 4 tbsp unsalted butter (56g)
  • 3 cloves garlic, minced
  • 50g grated Parmesan cheese
  • 1/4 cup vegetable broth (60ml)
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Prepare your ingredients by washing and slicing the zucchini.
  2. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  3. In a large skillet over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add zucchini slices to the skillet, season with salt and pepper, and sauté until tender and slightly caramelized, about 3–5 minutes.
  5. Pour in vegetable broth and about 1/2 cup of reserved pasta water, allowing it to simmer for a few minutes.
  6. Combine cooked pasta with the zucchini mixture in the skillet, adding grated Parmesan cheese. Toss until well mixed and creamy.
