  • 2 cloves garlic, minced
  • 4 cups romaine lettuce, chopped
  • 1 cup carrots, shredded
  • 1 cup cucumbers, thinly sliced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup freshly squeezed lime juice
  • 3 tbsp creamy peanut butter
  • 2 tbsp honey
  • 1/2 cup peanuts, chopped (for garnish)

Instructions

  1. Grill or bake chicken breasts until cooked through (internal temp of 165°F), about 6-7 minutes per side on medium heat or bake at 400°F for approximately 20 minutes. Let cool before slicing.
  2. Whisk together soy sauce, lime juice, peanut butter, and honey in a bowl until smooth. Adjust sweetness with honey or tanginess with extra lime juice if desired.
  3. Chop romaine lettuce and shred carrots while the chicken cools.
  4. In a large bowl, mix lettuce, carrots, cucumbers, and sliced chicken. Drizzle dressing over the top and toss gently to coat.
  5. Top with chopped peanuts for added crunch and serve immediately.
