  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 ripe peaches, diced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese until smooth. Add sour cream, vanilla extract, and eggs one at a time until well combined. Gradually mix in sugar.
  4. Gently fold in diced peaches and mixed berries.
  5. Pour the filling over the crust and bake for 50-60 minutes until slightly wobbly in the center.
  6. Allow to cool at room temperature for an hour before refrigerating for at least four hours before serving.
