  • 1 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp cayenne pepper (adjust to taste)
  • 2 bay leaves
  • 1 cup long-grain white rice
  • 3 cups low-sodium chicken broth
  • Fresh parsley or green onions for garnish

Instructions

  1. Soak dried beans overnight if using; rinse well if using canned.
  2. In a large pot over medium heat, add olive oil. Sauté onions, bell peppers, and celery for about 5 minutes until soft.
  3. Add sliced sausage to the pot and cook until browned for added flavor.
  4. Stir in minced garlic, cayenne pepper, and bay leaves; cook for approximately 1 minute until fragrant.
  5. Add rinsed beans (or canned), diced tomatoes, and chicken broth; mix well.
  6. Bring to a boil then reduce heat to simmer uncovered for about 30–40 minutes until thickened.
  7. Cook rice separately according to package instructions.
  8. Serve the bean mixture over rice and garnish with fresh parsley or green onions.
