  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup brown rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup bell peppers, diced (assorted colors)
  • 1 cup sweet corn (fresh or frozen)
  • 1 ripe avocado, diced
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients: dice the chicken and chop the bell peppers and garlic.
  2. Cook the brown rice according to package instructions.
  3. In a large skillet over medium-high heat, heat olive oil. Sauté the chicken with garlic until golden brown (about 6–7 minutes).
  4. Add bell peppers and corn; cook for another 5 minutes until heated through.
  5. Mix in black beans; stir until warmed (about 2 minutes).
  6. Assemble bowls starting with rice, followed by the chicken mixture. Top with avocado and cilantro.
