  • 9 lasagna noodles
  • 1 lb mixed seafood (shrimp, scallops, crab)
  • 8 oz cream cheese
  • 2 cups shredded whole-milk mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. In a saucepan over medium heat, combine heavy cream, lemon juice, garlic, salt, and pepper; heat through without boiling.
  4. In a large bowl, mix seafood with half the cream mixture and fold in spinach.
  5. In a baking dish, layer sauce, noodles, seafood mixture, mozzarella, and Parmesan until all ingredients are used.
  6. Top with remaining sauce and mozzarella; cover with foil and bake for 25 minutes. Uncover and bake for an additional 15 minutes until golden brown.
