Description

Mexican Gorditas are a delightful culinary treasure, boasting warm, fluffy corn-based dough enveloping savory fillings. Perfect for any occasion, these thick tortillas can be stuffed with cheese, meats, or veggies, delivering layers of flavor in every bite. Whether enjoyed as a snack or part of a hearty meal, they evoke comfort and nostalgia.

Ingredients

Scale
  • 2 cups masarepa (pre-cooked corn flour)
  • 1 cup water (adjust for consistency)
  • 1 tsp salt
  • 2 tbsp vegetable oil (for cooking)
  • 1 cup shredded cheese (like queso Oaxaca or mozzarella)
  • 1 cup cooked shredded meat (chicken or pork)

Instructions

  1. In a mixing bowl, combine masarepa, salt, and water to create a soft dough that isn’t sticky. Adjust water as needed.
  2. Divide the dough into golf ball-sized portions and flatten each into thick discs.
  3. Heat oil in a skillet over medium heat until shimmering.
  4. Cook each disc for 3-5 minutes on each side until golden brown and crispy.
  5. Remove from heat and slice open each gordita to stuff with cheese and your choice of meats or veggies.
  6. Serve warm with salsa or guacamole.
