  • 1 green bell pepper, diced

  • 2 bay leaves
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 4 cups water or broth (plus more for soaking)
  • 2 cups long-grain white rice

Instructions

  1. Soak the dried beans overnight in water. Drain and rinse before use.
  2. In a large pot, heat oil over medium heat. Sauté onion, celery, and bell pepper until tender (about 5 minutes).
  3. Stir in garlic and sliced sausage; cook until sausage is browned.
  4. Add soaked beans, bay leaves, cayenne pepper, salt, and enough water or broth to cover by an inch. Bring to a gentle boil.
  5. Reduce heat to low and simmer uncovered for about an hour until beans are tender.
