  • 1 lb steak (ribeye or sirloin)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup bacon bits
  • ½ cup sour cream
  • ¼ cup chopped chives or green onions

Instructions

  1. Preheat your oven to 400°F (200°C). Clean the russet potatoes under cold water, then pat dry.
  2. Prick the potatoes with a fork and rub with olive oil, salt, and pepper.
  3. Bake directly on the oven rack for 45-60 minutes until tender.
  4. While baking, season steak with salt and pepper; sear in a hot skillet for about 4-5 minutes on each side for medium rare. Let rest before slicing.
  5. Once potatoes are baked, slice them open and fluff the insides. Top generously with cheese to melt.
