  • 2 medium fresh lemons (thinly sliced)
  • 2 tbsp extra virgin olive oil
  • 8 oz fresh mozzarella cheese (sliced)
  • ¼ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves
  • ¼ cup toasted pine nuts

Instructions

  1. Preheat your oven to 475°F (245°C) and place a pizza stone inside if available.
  2. Roll out the pizza dough on a floured surface to about a quarter-inch thickness. Transfer to a parchment-lined baking sheet or the preheated pizza stone.
  3. In a small bowl, mix olive oil with the zest of one lemon. Brush this mixture over the dough.
  4. Layer mozzarella evenly across the dough, then arrange thin lemon slices on top and sprinkle with grated Parmesan.
  5. Bake for 12-15 minutes until the crust is golden brown and cheese is bubbling.
  6. Remove from the oven and top with toasted pine nuts and fresh basil leaves. Drizzle with additional olive oil if desired.
