- 1 (28 oz) can crushed tomatoes
- 1 cup low-sodium beef broth
- 2 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Drain excess fat.
- Add diced onion and bell peppers; sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add crushed tomatoes, beef broth, and oregano; stir to combine and bring to a simmer.
- Mix in orzo pasta, reduce heat, cover, and cook for about 10 minutes until orzo is tender and liquid is mostly absorbed.
- Remove from heat and let rest for a couple of minutes before serving. Garnish with fresh parsley.
