  • 1 cup orzo pasta
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 1 (28 oz) can crushed tomatoes
  • 1 cup low-sodium beef broth
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Drain excess fat.
  2. Add diced onion and bell peppers; sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add crushed tomatoes, beef broth, and oregano; stir to combine and bring to a simmer.
  5. Mix in orzo pasta, reduce heat, cover, and cook for about 10 minutes until orzo is tender and liquid is mostly absorbed.
  6. Remove from heat and let rest for a couple of minutes before serving. Garnish with fresh parsley.
