Instructions
- Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes). Let cool slightly before mixing with rice vinegar, sugar, and salt.
- Slice avocado and cucumber into thin strips. Cut eel into two-inch pieces.
- Place the nori sheet shiny side down on a bamboo mat. Wet your hands to prevent sticking and spread an even layer of sushi rice over the nori, leaving an inch at the top.
- In the center of the rice-covered nori, add avocado, cucumber, and eel slices. Get creative with your fillings!
