  • 2 cups short-grain sushi rice
  • 4 nori sheets
  • 1 medium cucumber, julienned
  • 1 ripe avocado, sliced
  • 8 tempura battered shrimp (store-bought or homemade)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha

Instructions

  1. Rinse the sushi rice under cold water until clear. Cook according to package instructions or use a rice cooker until fluffy and sticky.
  2. While the rice cooks, prepare the cucumber, avocado, and tempura shrimp as needed.
  3. Lay a nori sheet shiny side down on a bamboo mat. Wet your hands to prevent sticking and spread an even layer of rice over the nori, leaving one inch at the top edge.
  4. Place cucumber, avocado, and tempura shrimp horizontally across the center of the rice-covered nori.
  5. Starting from the edge closest to you, roll the mat tightly but gently over the fillings until you reach the exposed edge of nori; wet it lightly to seal.
  6. Slice into bite-sized pieces using a sharp knife dipped in water. Serve with soy sauce and spicy mayo.
