  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 2 nori sheets
  • 1/2 cup crab meat or imitation crab
  • 1/4 cucumber, sliced into strips
  • 1/4 avocado, sliced
  • 1/4 cup tempura flakes
  • Soy sauce for dipping
  • 2 tablespoons Kewpie mayo
  • 1 tablespoon unagi sauce

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions with 1 ¼ cups water.
  2. Once cooked, mix rice with rice vinegar, sugar, and salt until sticky.
  3. Place one nori sheet shiny side down on a bamboo mat. Wet hands to prevent sticking.
  4. Spread a thin layer of rice over nori, leaving an inch at the top. Add crab meat, cucumber strips, and avocado slices in the center.
  5. Roll tightly from the bottom using the bamboo mat; seal with water.
  6. Slice into bite-sized pieces with a wet knife. Drizzle with Kewpie mayo and sprinkle tempura flakes on top.
