  • 4 large russet potatoes
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese (divided)
  • 1 cup crispy bacon bits
  • 4 green onions (chopped)
  • 4 tbsp unsalted butter
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika

Instructions

  1. 1. Preheat the oven to 400°F (200°C). Scrub and poke holes in the russet potatoes.
  2. 2. Bake directly on the oven rack for 45-60 minutes until tender.
  3. 3. Allow potatoes to cool slightly, then slice in half and scoop out the insides into a bowl.
  4. 4. Mix potato flesh with sour cream, butter, 1.5 cups cheddar cheese, bacon bits, salt, pepper, and paprika until smooth.
  5. 5. Spoon the mixture back into potato skins and top with remaining cheese and extra bacon bits if desired.
  6. 6. Place on a baking sheet and bake at 350°F (175°C) for 20-25 minutes until bubbly.
