  • 34 boneless skinless chicken breasts (1 lb)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by chopping garlic and sun-dried tomatoes.
  2. Boil salted water in a large pot and cook pasta until al dente. Drain and set aside.
  3. In a skillet over medium heat, sauté chicken in olive oil for about 6 minutes per side until golden brown. Remove from heat and let rest before slicing.
  4. In the same skillet, reduce heat and sauté garlic until fragrant. Add sun-dried tomatoes followed by heavy cream; simmer to create a sauce.
  5. Combine sliced chicken and cooked pasta with the sauce; stir in spinach until wilted.
