Ingredients

  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tbsp Hungarian paprika
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup low-sodium chicken broth
  • 1 cup sour cream
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the onions and mince the garlic.
  2. In a large skillet over medium heat, heat olive oil and brown the chicken breasts for about 5 minutes per side until golden.
  3. Remove chicken from skillet; add chopped onions and sauté until translucent. Add garlic and cook for an additional minute.
  4. Stir in paprika, canned tomatoes, and chicken broth. Bring to a simmer while scraping up the bottom of the pan.
  5. Return browned chicken to skillet, cover, and let simmer for 25 minutes until cooked through.
  6. Remove from heat and stir in sour cream until well combined. Serve over noodles or rice.
