  • 4 boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, softened
  • 4 cloves fresh garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 tbsp soy sauce (low sodium)

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a bowl, mix softened butter with minced garlic, parsley, and soy sauce until well combined.
  3. Create pockets in the chicken breasts by slicing them sideways without cutting through.
  4. Stuff each pocket generously with the herb butter mixture.
  5. Dredge the stuffed chicken in flour, dip in beaten eggs, and coat with panko breadcrumbs.
  6. Place on the baking dish and bake for 25-30 minutes until golden brown and cooked through.
