- 8 oz wide egg noodles
- 1 lb lean ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups sharp cheddar cheese, shredded (divided)
- 1 cup sour cream
- 1 cup frozen mixed vegetables
- 1 cup beef broth
Instructions
- Preheat oven to 350°F (175°C). Boil water in a large pot and cook the egg noodles according to package instructions until al dente.
- In a skillet over medium heat, sauté the diced onion until translucent (about 3 minutes). Add minced garlic and ground beef, cooking until browned (5-7 minutes). Drain excess fat.
- In a large bowl, combine cooked noodles, sautéed beef mixture, mixed vegetables, sour cream, beef broth, and half of the cheddar cheese. Mix well.
- Transfer the mixture into a greased casserole dish and sprinkle with remaining cheddar cheese.
- Cover with foil and bake for 25 minutes. Remove foil for the last 5 minutes to allow the cheese to bubble and turn golden brown.
