  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 2 cloves fresh garlic, minced
  • 8 oz fresh burrata cheese
  • 2 tbsp olive oil (for frying)
  • Fresh basil leaves (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare your workspace with all ingredients ready.
  2. Place each chicken breast between plastic wrap and pound until about 1/2 inch thick. Season both sides with salt and pepper.
  3. Set up a breading station: one bowl with flour, one with beaten eggs mixed with garlic, and one with panko breadcrumbs.
  4. Dip each chicken breast first in flour, then in egg wash, and finally coat well in panko breadcrumbs.
  5. In a skillet over medium heat, heat olive oil until shimmering. Fry the breaded chicken for about 3-4 minutes per side until golden brown.
  6. Transfer to a baking sheet lined with parchment paper and bake for an additional 10 minutes or until internal temperature reaches 165°F (75°C).
  7. Let rest briefly before topping each breast with burrata cheese and garnishing with fresh basil.
